01 — The Fire
Binchotan burns cleaner and hotter than ordinary charcoal, and it took the kitchen four months to learn how it actually behaves. It doesn't forgive hesitation — the coals want the skewer moved at a specific moment, not a minute later.
There is no oven at Kōji, no flat-top, no fryer. Everything from the shishito to the wagyu striploin answers to the same twenty centimetres of glowing white ash. The discipline is the point.
03 — Visit
Walk-ins take the first open seat. For groups of 3 or more, book ahead — the counter turns slowly on purpose.
